KETO FRIENDLY INDIAN DISH - COCONUT CHICKEN CURRY
Ingredients:
- 6-8 pieces of chicken breast
- 1 tablespoon of coconut oil
- 1 large onion
- 4-5 cloves of garlic
- 1 teaspoon of ginger paste
- 1 teaspoon of cumin powder
- 1 teaspoon of coriander powder
- 1 teaspoon of turmeric powder
- 2 teaspoons of garam masala(or curry powder)
- 1 teaspoon of chili powder(or paprika)
- 2 cups of coconut milk
- 2 tablespoons of cream
- 1 teaspoon of sugar
- 1 teaspoon of lime juice
- 1 cup of broccoli florets
- Salt and pepper to taste
Recipe:
- Roughly chop 6-8 pieces of chicken breast in large cubes.
- Heat 1 tablespoon of coconut oil in a pan and cook the chicken cubes until they turn golden.
- Remove the chicken pieces and in the same pan, add 1 finely chopped onion.
- Fry the onion until translucent and then add 1 teaspoon of ginger paste, 4-5 finely chopped garlic cloves, 1 teaspoon cumin powder, 1 teaspoon coriander powder, 1 teaspoon turmeric powder, 1 teaspoon of chili powder(or paprika) and 2 teaspoons of garam masala(or curry powder) and mix well.
- To this, add 2 cups of coconut milk, 2 tablespoons of cream, 1 teaspoon of sugar and 1 teaspoon of lime juice and let it simmer.
- Now add the chicken pieces to the pan and let everything cook for another 15-20 minutes on low heat.
- Steam the broccoli florets in the meantime in a separate pan and once they are almost cooked transfer the florets to the chicken and coconut milk curry.
- Add some salt and pepper to the curry at last and serve hot.
